Ingredients
2 cups All Purpose Flour
1.5tsp Baking Powder
1/4tsp Baking Soda
1/2tsp Cardamom Powder (grind it with some sugar for fine consistency)
1/2 tsp Vanilla Essence (optional)
A pinch of Salt
3/4 cup Condensed Milk
3/4 cup Mango Pulp ( Indian store canned ones will work)
1/2 cup Oil
Instructions
In a large mixing bowl add all purpose flour, baking soda, baking powder, salt and cardamom powder. Mix it roughly.
Sieve this dry mixture two times. In another bowl, add wet ingredients – mango puree, oil condensed milk and vanilla essence.
Whisk the wet ingredients until oil is well incorporated.
Grease and line a 9×5 inch loaf tin with parchment paper. Preheat the oven at 360 F for 10 mins.
Now make a well in the center of the dry mixture and pour the wet mixture.
Gently fold the wet mixture into the dry mixture. Don’t overmix or the cake won’t rise.
Pour the batter into the lined/ well greased loaf pan.
Bake at 360 F for 30-35 mins until the toothpick inserted comes out clean. Let it cool down for 10 mins before inverting on to a wire rack. Cool it down completely before slicing.
Serve the slices with a cup of coffee/tea. Store in an airtight container for up to 5-7 days.
